Tiramisu is a popular coffee - flavoured Italian dessert, from Italian  meaning `lift me up`, exactly what we all need when the weather outside is terribly hot and stuffy. It takes about one hour to make a huge Family Size Portion of this dessert, but you can make a little one in no time!

I took a traditional Tiramisu recipe and slightly upgraded it for my own taste, for example in the original recipe ladyfinger is soaked in a mix of  Amaretto and cooled espresso and I`ve decided to skip alcohol for my Tiramisu. I did not specify how much mascarpone and other ingredients you`ll need to take - take the quantity that will satisfy your family. By the way you can substitute mascarpone with a sour cream, Greek yogurt or cottage cheese (vegan substitutions are non-dairy cream cheese, tofu and cashew puree). And if you are not a big fan of peach use any other fruit (banana, pineapple) or your favourite berries (raspberry or strawberry). Let`s start!


Ingredients

• Savoiardi Biscuits (Ladyfinger)
• Mascarpone
• 2 Peaches 
• Powdered Sugar
• 2 Eggs 
• Cooled Espresso
• Cocoa Powder or Chocolate Shavings - for decoration 

- To start you`ll need to separate egg yolks from the egg whites and whip them also separately. Add a pinch of salt to the whites, this will make them grow faster and easier. Yolks whip with a powdered sugar, until thick and pale in color. 

- Now it is time to mix yolks and whites together with mascarpone.

- In a separate bowl start to soak savoiardi biscuits (ladyfingers) and you can already start to arrange soaked ladyfingers close to each other in rows, until the bottom of the pan will be completely covered with ladyfingers. 

- Slice peaches and put them on a top of ladyfingeres, cover them with a generous coat of mascarpone. Smooth the coat with rubber spatula or a wide spoon. Create another layer and another layer, slowly building your future Tiramisu. 

- After everything is done put the dessert in the freezer for few hours, or the whole night. Before eating decorate it with cocoa powder or chocolate shavings and everything is done!
